Laurence Guillaumie is a professor in public and community health programs at the Faculty of Nursing Sciences of Laval University. She is, among other roles, a regular researcher at the Research Center of the CHU de Québec, at the NUTRISS-INAF research center (Nutrition, Health, and Society), and leads the “Territorial Food Systems” project at the Biofood Research and Innovation Hub. Her research program focuses on local food systems, with special attention to the Mauricie region. Her work encompasses a variety of interconnected issues, essential for a holistic understanding of sustainability and food accessibility.

This program includes five main areas: 1) Improving access to healthy food. This area emphasizes food security, equity, and inclusion, incorporating decolonial and anti-racist perspectives. 2) Reducing the environmental impact of the food sector. By focusing, among other things, on reducing waste, packaging, and greenhouse gas emissions, this area aims to lessen the ecological footprint of local food systems. 3) Supporting local economic development. Through local sourcing and technological innovation in distribution and transport, this area promotes regional economic growth. 4) Supporting Indigenous food sovereignty. This area focuses on public policies and practices of Indigenous food systems, underlying their rights, strengths, and knowledge in managing food resources. 5) Governance of local food systems. This area addresses mechanisms of socio-ecological transition, citizen participation, and the evaluation of local food systems, highlighting the importance of participatory and intersectoral governance.

Through these various areas, Laurence Guillaumie’s program aims to establish sustainable and accessible food practices, to build sustainable and inclusive food systems, respectful of cultural and environmental diversities, while incorporating a public health perspective.
